Poppy Seed Muffins

Thanks Toni, for the invitation to publish to your great new cooking blog !!
I thought for my first post I'd share these amazing muffins that we made together yesterday !!

1. Preheat the oven to 160 fan forced. (maybe go about 180 if it's not fan forced)

2. Mix the following ingredients 'til lumps of flour are gone ...

1 and 1/2 cups vegetable oil
4 cups flour
2 tsp salt
2 tsp baking powder
4 eggs
2 cups milk
3 cups sugar
2 Tbls poppy seeds
2 tsp vanilla extract
2 tsp almond extract

3. Pour into muffin tins.

4. Bake 20 - 25 minutes. I always bake about 10 minutes, then check them every 5 minutes after that til they are done. (when a toothpick inserted into the middle of them comes out clean ! )

Ingredients:

500-600 gm Chicken (I know it says this amount but I use 4 chicken breast)
2 chicken stock cubes
4 tbls plain flour
1 tbls curry powder (more or less as you want)
1 1/2 cups water
1 cup milk
1 tspn sugar
1 tbls lemon juice
Vegetables (as you desire)

Directions:

Melt butter.
Add curry and flour.
Gradually add milk and water.
Add stock cubes and stir until boiled and thickens.
Add chicken and vegetables, return to boil, reduce heat and add sugar and lemon juice.
Simmer 20-25 minutes.

Will add a photo after its cooked. Yummy! I can't wait for dinner.
